Cheesy Butternut Squash Noodles with Broccoli
This macaroni and cheese substitute is full of delicious vegetables and makes a healthy version of comfort food.
Makes 4 servings
1 head broccoli, cut into florets
1 tablespoon butter
2 cloves garlic, crushed
1 butternut squash, spiralized
6 oz shredded sharp cheddar cheese
1/2 cup milk
Salt and pepper, to taste
- Place broccoli florets in top of vegetable steamer and steam for 5 minutes.
- While the broccoli steams, melt butter in a large sautee pan. Add garlic and stir for a moment.
- Add spiralized butternut squash and cook, stirring occasionally until tender, about 4 minutes. Add milk and cheddar cheese, stirring until cheese melts.
- Toss broccoli with squash noodles and add salt and pepper to taste.
